What to Eat? What to Eat?
Getting and staying fit is my hobby. It kind of has to be, because my work is completely sedentary. Without an active hobby, my metabolism would not allow me to eat more than a thimbleful of food each day.
Unfortunately my former hobby was food. I love to cook, even baked professionally for a while. I love restaurants. I love food TV. I love to eat, and ate like it was my profession for quite a while.
So… a low-carb lifestyle is a big and comical switch for someone who worked hard to raise her own sourdough culture from scratch, and whose pantry hosts 6 kinds of nut oil, four types of salt and more jars of marmalade than an Iraqi palace.
I’m going to try to put my past to good use, though, and work up recipes for you, my wonderful readers. I know each of you follows your own path, so I’ll try to post recipes low-cal AND low-carb…
Low-cal recipe:
Mango Salad Dressing
Into a blender place:
1 ripe mango, cut into chunks
¼ c. orange juice
1 pinch curry powder
1 pinch salt
1 pinch black pepper
1 clove of garlic
Blend until smooth, and spoon over fresh greens, especially baby spinach! Or, place in a squeeze bottle, and make a pretty design on a large plate, fill the center with greens, grapefruit slices and red onions, then drizzle more dressing over the top.
Low-carb recipe:
Creamy Cucumber Cilantro Dressing
Into a blender place:
½ c. sour cream
½ seeded cucumber, chunked
3 Tbs. Roughly cut cilantro leaves
1 pinch salt
white pepper to taste
Blend until smooth. A great, fresh dressing on an iceberg wedge or romaine lettuce, or sliced tomatoes, raw or grilled.
