Feed Friends Well

Bookclub last night. I hosted at my house. And I tried something a little different.

Typically when I entertain, I'll make something low-carb that I can eat, but add some carbs and white flour products for friends. You know, so as not to subject innocent folks to my strange diet.

But you know, the more I read, and the more I see my friends struggling with their weight, the more I'm willing to just feed them the food I've learned to provide to my family. Why not? Why wouldn't I love and care for my friends as well as I do myself or my family?

Right?

And the ladies of the bookclub are particularly deserving people.

So, bookclub takes place at 7:30 in the evening, when we shouldn't be eating many if any carbs at all. We must have our wine, so I provided a very dry white.

And then I served:

Baked asparagus wrapped in prociutto
Easy! Oven at 450, wrap each raw asparagus spear in one very thin slice of prociutto. Lay them out on a pan, brush them with olive oil, and pop them in the oven for 15 minutes.

Steamed broccoli florets with curry-and-chile mayo dip
Steam florets for 5 minutes exactly, then cool with cold water, drain. Mix mayo with curry powder and chile powder to taste (I use lots).

Big strawberries with a cream cheese/sour cream/lemon oil dip
I mixed one container (8 oz) of whipped cream cheese with ½ c. sour cream, 1 T. sucralose (optional), and three drops of lemon oil. You could use the zest of ½ lemon here, which would be very pretty, but I was in a big hurry. The strawberries are a low-glycemic fruit choice, just 7 gr. carbs per cup, loaded with nutrients. A super food.

Brie and Sesame Wasa Bread
So, okay, I added a flour product, but it's easy for me to ignore the Wasa and just nibble on hunks of brie. Apparently it's just as easy for everyone else. I have lots of leftover Wasa

Mixed nuts
Mixed nuts without peanuts. I found a nice Brazil, macademia, pecan, cashew mix.

This was a beautiful spread. Full of color and intrigue. My friends appreciated it. I stayed more or less on plan, although it was so pretty and so good that I overshot my calorie load for the day, but only by a couple of hundred calories. I can make that up with an extra 20 minutes on the elliptical machine today.

And it all came together in 25 minutes flat. Fast, good, loving food.

And the leftovers are just waiting in my fridge,
